Healthy Chocolate Custard


It took my boy many tries until he guessed what this was made of. With a fourth of a cup filled with cocoa powder this custard/pudding so tastes like chocolate! But as the title reveals it, it is made out of healthy stuff. Actually, thinking about that–it would be hard finding an unhealthy raw custard base. 😀

KONICA MINOLTA DIGITAL CAMERAI like the consistency you get when blending an avocado but I’m not always up for such a fat bomb. Yes, healthy fats, but still. I needed an alternative to coconut cream, banana, etc.

After once making a tiramisu-like layer cake with a coffee-chickpeas-cream layer and being surprised, I had to widen my circle of competence when it comes to use legumes in dessert recipes. As I am on a raw journey now it hopefully won’t take long anymore and I will find time to dust off our sprouter to keep on enjoying those vitamin bombs. As legumes in general are high in protein, they will keep you full for quite a while. The sprouting increases (even multiplies!) the concentration of the B-vitamins and produces vitamin C. And not talking about the stuff that’s going to get lost by cooking.  So if you want this custard raw, just use sprouted lentils. Yes, lentils!:D

So here is what you need:

125g cooked or sprouted lentils

1/4 cup cocoa powder

1/4 cup coconut cream

1/2 cup dates

2 tbsp agave syrup

Mix everything in your blender and enjoy right away. I also filled this chocolate custard in popsicle forms but like most food, the flavour will fully enhance at room temperature when thawed.  I could imagine using the custard as a layer in an ice cream cake though. I should make such a cake :O

Tomorrow we are heading to Budapest, Hungary in an 18 hour bus trip. The joke is that we almost pay as much as we’d have paid for a 1.5 hour flight. But beside the ecological reasons, a bus trip can be much more fun 😀 I’m also very excited to stop by the raw vegan restaurant Mannatural Life Bar which I have found on the Internet. A raw vegan restaurant, really?! In fall 2013 there is going to open one in Zurich which is only half an hour from my house 😀 and most likely not payable. Sigh.
